Paleo passionfruit cake
There are 4 parts to making this cake- cake layers, strawberry jam, passionfruit curd and assembling it all together. Don’t worry, everything is super simple and you will whip it up in no time.
Let’s start with part 1 i.e. making the cake layers.
Part 1: Coconut turmeric cake
Prep Time: 15 minutes Cook Time: 20-25 minutes
Ingredients:
4 large eggs
1 cup canned coconut milk unsweetened, full fat (mix it well before using)
½ cup date syrup*
1 tablespoon vanilla extract
¾ cup coconut flour
¼ teaspoon sea salt
1 teaspoon baking soda
1/2 teaspoon turmeric*
1 teaspoon lemon zest*
Unsalted butter for coating pans
Note*: Turmeric and lemon zest are totally optional. When using turmeric make sure to use a high quality turmeric. I love turmeric from Diaspora Co. or Burlap & Barrel.I love to use date syrup from brand called Just Date Syrup.
Directions:
Preheat oven to 350 degrees and grease the bottom and sides of two 6-inch round cake pans with unsalted butter.
In a medium bowl, using a hand whisk, whisk together the eggs, coconut milk, date syrup, lemon zest, turmeric and vanilla.
Whisk in the coconut flour, sea salt and baking soda until the batter becomes smooth and free of lumps. See picture for consistency of the batter. If the batter seems very thick, add 1-2 tablespoons of water. See picture for batter consistency.
Once everything is mixed divide the batter into half in the prepared cake pans.
Bake for 20 minutes until the edges are golden brown and pull away from the pan and a toothpick inserted in center comes out clean. The color of the cake will turn brown as it has date syrup. So make sure to test by inserting a toothpick if it is comes out clean. Add 3-5 minutes if required.
Place the pan on a cooling rack. Let the cake cool for 15 minutes, then invert it, bottom side down, onto the cooling rack and allow it to completely cool down before adding the strawberry jam and passionfruit curd to assemble and decorate the cake.

Part 4: Bring it all together
Prep Time: 10 - 15 minutes
Directions:
After everything, i.e. cake, passionfruit curd and strawberry jam has cooled down you can start assembling the cake.
Start with the first layer of the cake. My cake was relatively flat at the top but if you have a curved surface cut a half inch layer to get a flat surface.
On the top of the first layer add a generous layer of strawberry jam.
Add the second layer of the cake on the top. Add some more strawberry jam and then a generous layer of passionfruit curd.
Decorate with edible fresh and dried flowers.
Refrigerate the left over cake.
